Delightful Snacks &Treats
My ‘As-simple as it can get’ Sourdough
Early Morning (6-8am; if live in hot climate/season or do this night before just before sleeping if in cooler climate/season)
Feed starter equal parts water and flour (by weight) when you stir it should be thick not thin) and have enough for half cup with a bit left over after for next baking
Afternoon (around 4 hours later or morning if in the cooler climate)
When starter has at least doubled and is bubbly (can do floating test to check) Mix ingredients
1/2 cup starter
1.5 cups filtered water
1.5 teaspoon sea salt or Himalayan salt
3.5 cups flour (Optional to add in seeds/herbs- my favorite is a mix of Flaxseed, Chia, Hemp & Sesame Seeds!)
-Mix all together in a bowl to form a shaggy but not too wet/sticky ball, cover with tea towel & put timer on for 30 mins
Stretch & Fold (see here for example)
Timer for 20 mins then another stretch and fold

Leave on counter for 6-8 hours to bulk ferment covered with tea towel
Evening • Shape: sprinkle flour on counter and then shape into bouncy round ball (optional to spank it, very fun)
Place in flour dusted bowl with towel and cover with tea bowl ; put in fridge overnight
Next Morning • Heat oven to 410-420 and put Dutch oven with lid on inside to heat up, Wait about 10 mind
Score bread
Bake with lid on for 20 mins
Remove lid and bake another 13-20 mins (depending on your oven)
Voila ! I love to enjoy with Butter, Strawberry Jam & Havarti Cheese or Butter Raw Hoeney & Sprinkles Cinnamon on top! Enjoy!
Nourishing Hot Cacao
In a small pot, warm your Mylk of choice- I love this with Coconut, Almond and/or Cashew Mylk.. (the creamier the better!)
Add desired amount of pure cacao powder (look on the label to make sure cacao/cocoa powder is the only ingredient, can also look out for descriptors such as 100%. raw, non-alkalized/ not “dutch” processed for best quality with the most nutrients, minerals & richness!
Sweeten by warming with jaggery or stir in maple syrup or raw honey after removing from heat
Coconut Cardamom Mango Snack
Cut up a ripe mango into chunks (trick, peel the skin with a sharp knife first if it’s feels like it will be too soft and stringy)
Top with desiccated coconut (fresh is even better!) and sprinkle on some ground cardamom spice!
So Simple, but SO delightfully delicious.
Perfect as a afternoon snack!
Pineapple Banana Spiced Smoothie
Blend together:
1 Banana
1/2 cup Pineapple
1/8 cup Hempseeds (or cashews)
1/2 teaspoon Turmeric
An inch of Fresh Ginger
Cinnamon & Cardamom
Coconut Mylk (or sub for another kind of Mylk)
